Banana & Parsley Bread

1 1/2C plain flour
1tsp bicarbonate of soda
3/4C caster sugar
2Tbsp butter, melted
3 bananas, mashed
3/4C roughly chopped flat-leaf parsley *
1/2C chopped walnuts *


1. Preheat oven to 180C and grease a 23 x 10cm loaf tin.


2. In a medium sized bowl sift together flour, bicarbonate of soda & sugar. Add butter, bananas, parsley & walnuts and mix gently until just combined.


3. Decorate top of mixture with some extra parsley leaves and bake in oven for 50-55 minutes.


4. Cool in tin for 10 minutes before turning out onto wire rack to cool completely. Serve toasted and spread with butter.


Note: If you aren't game enough for parsley you can omit it, just increase walnut to 1C. Alternatively you can use chocolate chips in place of walnuts, or a mixture of both.
