Asian Style Chicken Meatballs
Makes 30
500g chicken mince
2tsp grated ginger
2 crushed garlic cloves
1Tbsp chopped lemongrass
1 1/2C breadcrumbs
2Tbsp cornflour
2Tbsp soy sauce
1 lightly beaten egg
1Tbsp chopped coriander
1. Combine all ingredients in a large bowl, cover and refrigerate for at least an hour (or overnight).
2. Preheat oven to 180C and line 2 baking trays. Working with half of the mix at a time (and keeping the other half in the fridge), roll tablespoons of mixture into balls and place on prepared baking trays. Add more breadcrumbs if necessary. Cook for 10-15 minutes or until golden and cooked through.
