Linguine with Bacon, Mushrooms & Feta

Serves 4

500g linguine pasta
1Tbsp olive oil
4 bacon rashers, chopped
2 garlic cloves, crushed
1 red onion, thinly sliced
150g mushrooms, sliced
125ml thickened cream
1Tbsp dijon mustard
2Tbsp parsley
1Tbsp thyme leaves
pepper
100g feta cheese


1. Cook pasta according to packet directions. While it is cooking, heat oil in a frying pan over medium-high heat and cook bacon, garlic & onion for about 3 minutes, until the onion softens.


2. Add mushrooms and cook for another 2 minutes before adding cream & mustard and cooking until the sauce thickens slightly, around 2-3 minutes.


3. Once the pasta is cooked, drain well and return to the pot. Pour cream mixture over the pasta, add parsley & thyme and toss gently to combine.


4. Divide among serving bowls, season with pepper and sprinkle with crumbled feta.
