Spiced Lentils

Serves 4 as a side

vegetable oil spray
1 brown onion, sliced
1tsp garam masala
1 carrot, diced
1/2C water
1Tbsp tomato paste
400g can brown lentils, drained and rinsed
juice of 1 lemon
3/4C chopped flat leaf parsley



1. Heat a frying pan over medium heat and spray with vegetable oil spray. Add onion and cook for 2-3 minutes before adding garam masala and cooking for a further minute.


2. Add carrot, water & tomato paste, stir to combine and simmer for 5 minutes.


3. Add lentils, reduce heat to low and cook for 2-3 minutes or until heated through. Stir through lemon juice & parsley. Serve.
